Recently, US Apple Export Council, India curated a dinner for the selected food bloggers using one key ingredient – Apples. Yes, from soup to salad to main course to dessert, every course of the meal had apples in it. I was one of the selected food bloggers who were brought together to have this amazing culinary experience by the Food Bloggers Association of India (FBAI).
Clyde Comello, Chef de Cuisine at Theory, Lower Parel was the genius behind this curated menu and offered us a meal which was tasty, refreshing, out of the ordinary and very well made and balanced. Here’s the breakdown of the 4-course meal as an Instagram feature.
Curried carrot and apple soup – it's a soul food. Such good taste and creamy after taste – thanks to the butter and ghee used. Made with 2 healthy ingredients – Apple and carrot, this is truly a healthy way to fill up your tummy. I love salads but this one takes the cake! Made with red wine poached apple and gratinated goat cheese on the bed of crunchy endives, drizzled with red wine reduction apple sauce and hazelnut, it tastes great. You can taste the individual flavours even when they are so well balanced. Especially loved the crunchy endives and the goat cheese. In the main course, I much preferred the vegetarian option, Apple gnocchi! It's made with butternut squash and sage butter. Pan seared Apple gnocchi is served with cinnamon glazed squash and burrata. It tasted surprisingly nice and Apple used in the gnocchi was not overpowering and added a subtle flavour to the dish. The star attraction for me in tonight's apple curated menu brought to us by the US Export Council was the apple baklava. For the dessert, the chef used phyllo sheets in an artsy manner to wrap diced apples within. Low on sugar, the Apple baklava was served with the homemade vanilla ice cream which tasted much better than the run-of-the-mill vanilla ice cream. Needless to say that we all enjoyed this sit down dinner. I love the fact that an entire meal was curated with apple as the main ingredient. All the flavours were so well balanced. Be it something sweet with apples or something spicy or tangy with apples. Apples proved to be such a versatile fruit.
